Nutella fairy cakes

These have been in my mind for quite a while. I have been thinking about how Nutella might taste in the middle of a fairy cake and what would happen to its consistency. I can tell the seasons from a jar of Nutella.  In the winter it is almost impossible to spoon out of the jar, the cold of the cupboard has set it hard.  In the summer it becomes oily and hard to keep on the knife as it is lifted out of the jar.

Well, these little cakes were made when the Nutella is of perfect consistency, on a mild spring day, when the sky is an almost azure ( I am in England after all and we don’t often get an azure sky) and the temperature is that wonderful warm on your back but don’t reach for the sun screen warm. The Nutella stayed soft in the centre of the cakes making for a lovely bite of gooeyness.  This also means that there is no need for frosting – perfect.
Makes 12

110g light soft brown sugar
110g softened butter
120g self raising flour (or plain flour with 1 tsp baking powder added)
20g good quality cocoa
2 eggs
Nutella or hazelnut chocolate spread, about 6 teaspoons

Method

Place all of the ingredients, except for the Nutella, in a large bowl and whisk well until all is combined.

Place a scant teaspoonful of the mixture into a fairy cake (mini muffin) case in a patty (mini muffin) tin.  Place  half a teaspoonful of Nutella on top.  Cover with another scant teaspoonful of cake batter.  Repeat with the remaining eleven.

Place in a preheated oven at 180°c, gas mark 4 or the baking oven of the Aga for 15-20 minutes until springy to the touch of a light finger.

Place on a wire rack to cool.

Breadsticks

I made these for saturday night too.  I have wanted to make them for a while and saturday presented the perfect opportunity.  The recipe is from Daniel Steven’s Bread book (River Cottage Handbook No. 3), which is a great book and deserves space on any keen cook’s shelf.

I sprinkled some with sea salt, some with freshly ground pepper, some with crushed chilli and the rest with sesame seeds.

Next time I make them I will be more careful not to stretch them when I lift them onto the tray.  Stretching leads to thinner parts which cook quicker then the rest. I think they were worth the effort, sometimes  it is good to make something that you can buy so easily.

Makes about 30

250g strong white bread flour
250g plain flour
2 tsp fine salt
7g sachet easy bake yeast
glug of olive oil
325ml warm water

Olive oil to brush on breadsticks and then the toppings of your choice or you could leave them plain.

Method

Place the flours, salt and yeast in a bowl and add the olive oil and the water and mix to a sticky dough.  Turn onto a work surface and knead until the dough feels smooth and elastic. Form into a ball place back into the bowl and cover with a large bin liner.  Leave until the dough has doubled in size.

Press the air out of the dough gently with your fingertips and then roll the dough out on a floured surface until it is about 1 cm thick.  I split the dough in half before I rolled it out so that it didn’t become unmanageable.

Then cut into strips as wide and as long as you want.  Lift carefully onto a lightly greased baking tray (I used four baking trays for all of the dough), brush lightly with olive oil and then sprinkle your topping on. Cover again with the bin liner and leave to rise for about 30 minutes.

Preheat the oven to 200°c, gas mark 6 or use the roasting oven of the Aga and then cook the breadsticks for about 20 minutes until they are golden.  Cool on a wire rack.

Spicy caramel nuts

I am no Nigella Lawson!  When she gives a dinner party for friends she gives the impression that she wanders in from work and throws together a fabulous feast.  When I have a dinner party it takes me all week to move the billion and one toys out of the downstairs living space to be hidden out of sight upstairs.  Then the dusting, which has been put off for more weeks than is reasonable, has to be undertaken.  Then the sweeping and the mopping.  I don’t want my friends to see how slovenly I really am! So last week was a week of preparation for a gathering of friends at our house on saturday night.

I love having friends over and hearing the house ring with laughter and I love cooking something for everyone to share.  These nuts went down well with everyone.  Watch out though, one or two handfuls and you are hooked…

150g caster sugar
150ml water
1 tsp fennel seed
1½ tsp cumin seed
½ tsp crushed chilli
salt and pepper
400g mixed nuts and seeds

Method

Place the sugar and water into a heavy based pan and heat over a gentle heat until the sugar has dissolved.  Turn the heat up and bring to a boil and boil for about five minutes until the mixture has turned darker and is syrupy.  Add the spices.

Place the nuts onto a silicone sheet on a baking tray (a silicone sheet prevents the nuts from being stuck forever to your baking try) and pour over the syrup, being very careful as it is extremely hot. Put the baking tray into a preheated oven at 200°c, gas mark 6 for 5-6 minutes until the nuts have toasted.  Leave to cool and the syrup will harden.  Break up into chunks and serve with pre dinner drinks.

Lime and chocolate cheesecake

This month’s We Should Cocoa Challenge is hosted by Chele over at Chocolate Teapot and she decided that lime would be this month’s magic ingredient.  I had lots of ideas, including a lime flavoured chocolate cake with lime buttercream, (which sounds so delicious I think I might just make it yet), but yesterday was my turn to make Sunday lunch and I fancied making a cheesecake. I used a similar recipe to the successful cherry cheesecake Mr OC made not so long ago, but added plenty of grated rind and juice of lime.  The chocolate has taken a bit of a back seat just making a cameo appearance in the crust and a light grating on the top.  The reason for this is that my folks are not big fans of chocolate (how I manage to be their daughter I am not sure!).  But the presence of chocolate just about shines through.

This time I cooked the crumb base, but it is not really necessary.  I did it this time because I used Hob Nobs and I thought the oats might make a sort of flapjack base.  I was right.

This cheesecake is zingy and refreshing and makes a lovely end to a roast dinner.  You could say it is a light dessert, but that is then counteracted if you follow it up with a serving of apple crumble and then a serving of crème caramel – oops!  Oh well, it was a Sunday.

200g chocolate coated biscuits ( I used chocolate Hob Nobs)
100g butter, softened

400g cream cheese, at room temperature
50g icing sugar
finely grated zest and juice of 2 limes
300ml double cream

To decorate – the finely grated rind of 1 lime and some finely grated chocolate

Method

Place the biscuits into a food processor and whizz until crumbs.  Add the butter and whizz again until well mixed. (If you don’t have a food processor then place the biscuits into a food bag and bash with a rolling pin or a can.  Melt the butter in a small pan and add the biscuit crumbs and mix well. )

Press the crumbs into a 20cm springform tin, making sure they are well pressed down.  Now you can leave it like this or you can bake it in a preheated oven at 180 °c, gas mark 4 for 6-8 minutes until lightly golden.  Leave to go cold.

In a large bowl mix together the cream cheese, icing  sugar and the rind and juice of 2 limes.  In another bowl lightly whip the double cream and then combine with the rest of the ingredients.  Spread this over the crumb base, levelling with a palette knife.  Place in the fridge until you are ready to serve.  When you are ready to serve grate over the rind of one more lime and a chunk of chocolate.

Chicken Nuggets

My eldest daughter is quite taken with the chicken nugget.  She has had them at parties and has started to ask me for them at home.  Now, I am not completely militant about what they eat, they consume more than their fair share of sweet things (don’t tell the dentist) but I don’t like to put food that has most likely come from ill-treated animals, is likely to be the worst bits of those badly treated animals covered in E numbers and other nasty things that we don’t need to eat, in front them for their dinner. So, I don’t mind them having them at parties (no kid wants to seem different from the rest), but I am not going to serve them for an evening meal.

This garbled philosophy of mine – give them good things to eat but try not to make them feel different – came to a head at the weekend when we were driving past a McDonalds.  My children are aged 6 and 4 and I have managed to not take them to a McDonalds yet. I know that McD has attempted to clean up their act and provide healthier food, but it still doesn’t make me want to take my children there to eat.  There are lots of independent cafes and restaurants that we go to regularly so I have never felt the need to sit them down to a Big Mac and fries.

Well, on Sunday as we were driving past the golden arches, the eldest said “What is McDonalds?  Everyone at school talks about it and has been?”, she said this in a voice which suggested that everyone at school might have been a bit shocked to hear that she had never been and she didn’t know what it was.  Oh, the parental guilt flooded over me.  Poor kid. I fear it might not be too long before I have to darken the door of our local McD.

Anyway, in the meantime and as a strategy for keeping that moment a little further in the future I made some chicken nuggets.  These ones are made from organic free-range chickens, who I hope had happy (albeit short) lives.

It is hard to be precise about quantities, particularly of the breadcrumbs as it depends on how thick you like your coating to be.  I double dipped mine, i.e flour, egg, breadcrumbs, back into the egg and then more breadcrumbs.  You will need a thick layer of breadcrumbs on a plate. Sorry I can’t be more accurate.

One good-sized chicken breast makes about eight nuggets.

1 chicken breast
About 3 tbsp flour
salt and pepper
2 eggs
breadcrumbs

Method

Chop the chicken into small chunks (two bites per nugget is about right).

Spread the flour onto a plate and season with salt and pepper.

Crack the eggs into a bowl and beat together.

Spread breadcrumbs in a thick layer on a plate.

Take a nugget and coat in the flour, tap gently to get rid of any excess flour.  Dip into the egg, making sure it is well coated and then roll in the breadcrumbs.  You can then double dip if you prefer a crunchier nugget.  Dip back into the egg and roll again in the breadcrumbs. Place on a plate. Repeat with the other pieces of chicken.  You can now refrigerate these until you are ready to cook.

Lightly grease a baking tray and place the nuggets onto the tray.  Sprinkle lightly with oil.  Place in a preheated oven at 200°c, gas mark 6 or towards the bottom of the Roasting Oven of the Aga for about 15 minutes until the chicken is cooked through and the coating is golden.  Serve with a salad and hope that your children forget about burger restaurants.

Chocolate hazelnut cupcake with coffee buttercream

I think I could benefit from a cupcake decorating course 🙂

I made these the other day to have in the park on the walk home from school to celebrate the change in the weather we seem to have had in the last week or so.  Spring may actually have sprung.  Of course, though, because we had planned a picnic the English weather let us know that we were fools and the sun didn’t peek out of the clouds once.  It was a fairly cold picnic!  Oh well, the cupcakes were good.

I made these in muffin tins so that they are a fair-sized cupcake. You don’t see fairy cakes about much these days.  A fairy cake sized cake is sometimes exactly right to fill a hole.  So feel free to make these smaller.  If you are making them muffin sized they will make 12, so smaller might make 16- 20 I would say.

200g unsalted butter, softened
200g golden caster sugar
3 eggs
100g whole hazelnuts
100g plain (all-purpose) flour
25g good quality cocoa
2 tsp baking powder

For the frosting
100g butter, softened
200g icing sugar
3 tsp cool strong coffee, made from 3 tsp of instant coffee dissolved in  4 tsps of just boiled water
2 tbsp double cream

Method

Place the hazelnuts on a baking tray and place into a preheated oven at 200°c, gas mark 6 for about 4 minutes until they are lightly toasted.  Be careful, they soon burn. Pour them onto a clean tea towel and rub gently.  Most of the skins will come off, but leave some on as they add a good flavour.  Turn the oven down to 180°c, gas mark 4.

Put the hazelnuts into a food processor and whizz until they are large crumbs.  This adds a nice crunchiness to the cupcake.

Place the butter and sugar into a bowl and whisk until fluffy and pale.  Add the eggs, one at a time, and beat well with each addition. Gently stir in the hazelnuts.

Sift the flour, cocoa and baking powder over and fold in gently.

Place dessertspoonfuls of the mixture into the muffin cases in a muffin tin. They should be about three-quarters full. If you are using fairy cases then use a teaspoon to fill them three-quarters full.

Place in a preheated oven at 180°c, gas mark 4 or the Baking Oven of the Aga for about 20 – 25 minutes for the muffin sized cakes or 10-15 minutes for the fairy cake size.  They should look firm and feel springy to a gentle touch.

Leave them to cool in the tin for a minute or two and then lift out onto a wire rack to cool completely.

To make the frosting, beat the butter in a bowl until soft, add the icing sugar and stir in gently at first.  If you beat it straight in you will end up with a fine layer of icing sugar dust all over the kitchen.  When it is starting to clump together start to whisk it until it is fluffy. Add the coffee and beat again. Add the cream and beat until all is combined.  Pipe over the cupcakes more artistically then I can manage.

Oven Baked Pepper and Onion Bhaji

We have eaten more than our fair share of meat in this household this week so last night I wanted to do something meatless.  I have posted onion bhajis before, but last night I didn’t feel like deep-frying.  I wanted something a little bit healthier.  So I decided to give cooking the bhajis baked in the oven a go and they taste just as good as the deep-fried variety.

I served them with a cauliflower curry, rice and a cucumber and yoghurt dip.  Very tasty it all was too, except I might add more spice to the cauliflower next time as a cauli can soak up a lot of flavour. So I will work on that before I post it here.

I used the same batter as last time, but because they were going to be oven baked I sweated the pepper and onion slices before putting them in the batter.  Then I could be sure they would be cooked through.

Gram flour is made from ground chickpeas and imparts a delicious nuttiness and a beautiful yellow colour.

1 small red pepper, sliced thinly
1 onion, sliced thinly
1 tsp coriander seed
1 tsp cumin seed
1 heaped tsp crushed chillies
100g gram flour
100ml warm water
salt and pepper

Method

Heat a tablespoon of oil in a pan and sweat the onion and pepper until the onion is translucent and the pepper is tender. They shouldn’t brown.  Leave to cool.

Place the coriander and cumin seed in a dry pan and heat over a medium heat for a minute or two until their scent is released.  Tip them into a mortar and pestle (or use a bowl and rolling-pin) and grind them finely.

Sieve the gram flour into a bowl and add the coriander, cumin and crushed chillies and stir well. Pour in the warm water and whisk until smooth.  Add freshly ground pepper and salt. Leave the batter to rest for 30 minutes.

Put the pepper and onion into the batter and mix well.  Place spoonfuls of the mixture onto a greased baking tray and bake in a preheated oven at 180°c, gas mark 4 or the Baking Oven of the Aga for about 15 minutes until golden and crunchy.

Earl Grey Kisses

Are you ready for a tale of woe?

This month’s We Should Cocoa Challenge was hosted by Choclette and she came up with the fantastic idea of creating something with chocolate and tea.  Now straight away the thought struck me that Earl Grey truffles would be a lovely thing.  Except I had no Earl Grey in the house.

The days of February passed in a dash and I suddenly found myself in the middle of half term, at home with two busy children and still no Earl Grey.  Several trips to the shops later and still no Earl Grey.  It was the final day of the challenge and I managed to remember to buy Earl Grey, but then a cough came on and I ran out of energy and time.

Anyway, Sunday morning arrived and I thought I would make the truffles for eating after dinner.  I made them but the ganache split. I was making dinner for ten so the truffle mixture stayed in the fridge.  Monday morning and the split ganache was saved with the addition  of a bit more cream, but then I was busy and when I took the ganache out of the fridge it had set solid and there was no way any truffles could be formed.  The split ganache had returned with a fury it seems.

So today I reheated the ganache and yes it is well and truly split.  No truffles will be made from this. But in that ganache is 100g of chocolate and 200ml of cream.  I was not about to waste it.  The little one is off from nursery with a cough of her own but wanted to make cookies.  So here they are, cookies made with the ganache and filled with the ganache.

I will try to make the truffles again as the mixture tasted lovely.  These cookies are tasty but the delicate Earl Grey taste is lost amongst the biscuityness of it all.  But the ganache has at least been saved.

For the ganache:

100g best quality dark chocolate, chopped finely
200ml double cream
4 heaped tsp Earl Grey loose tea

Method

Pour the cream into a small saucepan and add the tea leaves.  Heat until just under boiling point. Take the pan off the heat and leave to infuse for  15 minutes. Place the chopped chocolate into a shallow bowl.  Strain the cream through a sieve into a jug, reheat gently and pour over the chocolate.  Leave to melt for a minute or so and then stir gently until the mixture is smooth.  If you successfully manage this without it splitting and becoming granular then you should be able to place it in the fridge for an hour or so and then roll into truffles.

For the cookies:

100g butter, softened
75g caster sugar
1 egg yolk
3 tbsps of the Earl Grey chocolate ganache
200g plain flour
1 tsp baking powder
a splash of milk if necessary

Method

Cream together the butter and the sugar until fluffy.  Add the egg and beat until well combined.  Add the ganache and stir to mix.  Sieve over the flour and baking powder and stir until the mixture comes together into a stiff dough.  You may need a splash of milk to help it come together.

Roll teaspoonfuls into balls and flatten into discs and place onto greased baking trays (you will need two).  Bake in a preheated oven at 180°c, gas mark 4 or the Baking Oven of the Aga for 8-12 minutes until they look dry and feel firm.  Leave to cool on the tin for a couple of minutes and then remove to a wire rack to cool completely.

Sandwich two of the biscuits together using the Earl Grey chocolate ganache.

Flapjacks

I have several recipes for flapjacks, when I am feeling fruity I make the ones I posted back in September 2009, if I want something unadulterated I make these.  They are sweet little beasties, so you can’t call them health food, but they hit the spot if you are looking for a good flapjack.  A bit chewy, a bit soft, oaty and sweet.  They are good for picnics and bike rides.

You can use 150g of demerara sugar or of granulated instead of half each.  I just like the crunchy texture of the demerara in my flapjacks and I like the way the granulated melts into the butter.

Makes about 15 squares

150g (6oz) butter
75g (3oz) golden granulated sugar
75g (3oz) demerara sugar
3 tbsp golden syrup
300g (12 oz) oats

Method

Place the butter, sugar and syrup in a large pan and place over a gentle heat until the butter has melted.  Mix well together and then stir in the oats.

Butter a 30cm x 20 cm dish and then pour in the mixture.  Press down well with the back of a metal spoon.

Place in the centre of a preheated oven at 180°c, gas mark 4 or in the Baking Oven of the Aga for 20-25 minutes until golden brown all over.  Whilst the mixture is still warm run a knife around the edge of the dish and cut the flapjack into squares. Leave to cool completely in the tim before removing.

Peanut Butter Cookies

I have a thing for peanut butter, there are times when I eat it a lot.  It’s one of those things that I just have to have.  It has to be crunchy and it has to be just peanuts and oil in a jar, no added sugar or anything else.  It has to be good. I have it on toast, on its own or with Marmite, with jam, even with marmalade.  Then there are times when I fancy dunking it into a cup of tea.  In which case these cookies have to be made.  Most of you know I also have a similar thing for chocolate and so when I made some last week I add 50g chopped dark chocolate at the end of mixing and they were good.  But in a way I think the unadorned version is better.

They are crumbly, light and deliciously peanutty.

50g butter, softened
25g caster sugar
2 tbsp crunchy peanut butter
1 egg yolk
100g plain (all purpose) flour

Method
Cream the butter and sugar together until fluffy.  Add the peanut butter and mix again.  Add the egg yolk and beat well.  Stir in the flour.  It should form a soft dough.

Roll teaspoonfuls of the mixture into balls, place on a lightly greased baking tray and flatten using the tines of a fork.  Place in a preheated oven at 180°c, gas mark 4 or the Baking Oven of the Aga for 8-10 minutes until lightly golden.  Leave to rest on the tray for a few minutes, then place on a wire rack to cool.
